
So lunch time rolls around and I'm getting the ever so lovely chitter chatter of kids,"We are hungry,whats for lunch mom?" Im thinking hmm... no idea as the empty bubble forms above my head, cartoon style.
So again I began to rummage through the fridge and cupboards. I realized I had tortillas my mom had brought us on Halloween. I also had some avocados that needed to be used. I thought to myself, "Self, you should make some veggie quesadillas."
When my son saw me chopping up the green goodness; avocado, cilantro, jalapeno, zucchini and green onions, he started to freak a little, firing off questions. "Mom what are you making?", "Mom do I have to eat that too?", "Mom what is in that?" Jake, chill! You will like it, its going to be good, I assured him. So I continued to chop veggies. I then drizzled the pan with a little olive oil and let the sauteing begin. I added some black beans, fresh garlic, lime and spices. Oh ya and a red, yellow and green pepper medley! After the veggie mixture was finished, I warmed a tortilla in a stainless skillet until it began to crisp. I then added the veggie mixture to one side and sprinkled with a little shredded mozzarella cheese and folded in half. Last but not least, I drizzled a cilantro sour cream I whipped up over the top and garnished the quesadilla with sliced avocado. I must say it was bursting with flavor and enjoyed by all, even Jake!
