My Favorite Kind of Food? Mexican!



Picture this: Tuesday afternoon, three starving adolescents (one being me), and a busy mommy. What happened? My mom whipped up what she makes best, Mexican food.

She made veggie quesadillas. I felt like these pictures were hard to take! With the steam getting in my way and not catching what I wanted to but they turned out okay. I think the picture of the finished product is my favorite.

The quesadillas were amazing! When I think of healthy food, I think of stuff I don't want to eat. I mean I'm really not that picky, but I would so much rather eat junk food than healthy food. It didn't taste like "healthy" food, even my younger siblings enjoyed it! I give this recipe 5 stars. Haha

Veggie Quesadilla




So lunch time rolls around and I'm getting the ever so lovely chitter chatter of kids,"We are hungry,whats for lunch mom?" Im thinking hmm... no idea as the empty bubble forms above my head, cartoon style.
So again I began to rummage through the fridge and cupboards. I realized I had tortillas my mom had brought us on Halloween. I also had some avocados that needed to be used. I thought to myself, "Self, you should make some veggie quesadillas."

When my son saw me chopping up the green goodness; avocado, cilantro, jalapeno, zucchini and green onions, he started to freak a little, firing off questions. "Mom what are you making?", "Mom do I have to eat that too?", "Mom what is in that?" Jake, chill! You will like it, its going to be good, I assured him. So I continued to chop veggies. I then drizzled the pan with a little olive oil and let the sauteing begin. I added some black beans, fresh garlic, lime and spices. Oh ya and a red, yellow and green pepper medley! After the veggie mixture was finished, I warmed a tortilla in a stainless skillet until it began to crisp. I then added the veggie mixture to one side and sprinkled with a little shredded mozzarella cheese and folded in half. Last but not least, I drizzled a cilantro sour cream I whipped up over the top and garnished the quesadilla with sliced avocado. I must say it was bursting with flavor and enjoyed by all, even Jake!

Peaches & Waffles


So before I write about the food I would like to apologize in advance for the pictures. This is definitely a new experience for me. I don't take pictures of food, so I'm looking at this as a photography project as well as a plan to eat healthy. I am hopefully getting a new camera soon *cough cough, mom, hint hint* and that should help. I also have to figure out the best lighting in my house. Once I get all my ducks in a row, the pictures will get better... I promise! (:

Now onto breakfast:
Tuesday morning was the start of all this madness. My mom decided that she didn't have time to make a full blown breakfast so instead she threw two Go Lean waffles in the toaster and threw some peaches on the top. I am not a huge fan of wheat anything. I am a white bread kinda girl, so I thought it was just okay. But if you love wheat waffles, peaches, and are constantly on the go, it's the perfect breakfast for you!

Need Something Fast for Breaky That Isn't Halloween Candy



So I woke up Tuesday morning and was freaking out because I was surrounded by Halloween candy, cupcakes and such. I wanted to start my healthy eating but needed something quick because I had plenty-o-things to do. So I began scurrying around the kitchen looking for something yummy to make. Notta. Then...! I spotted two lonely Go Lean waffles in the freezer, the kind you put in the toaster. (Can't get much faster than that) I thought to myself how could I spice these up with out adding sugar,fat and calories? Ah ha, got it, my coveted Utah peaches that I froze in September. Mmmmm they are really tasty and definitely do not need sugar. I defrosted a cup in the handy dandy microwave and voila, breaky! Not so gormet, I know. But hey, its healthy and tasted good. Mission accomplished.

Motivation.... Don't Have It!

It's sad, yet so true! I am unmotivated to go to the gym and stay in shape. I am also unmotivated to eat healthy. I have lived in same house as my mother my whole life, and just like her blog said, she LOVES food; therefore, I love food. It's true that your eating habits come from many different aspects, one of those being your family/home life. So all that to say, I'm unmotivated to work out and love food! That is a bit of a problem. I want to stay in shape, and I want to be healthy but I don't want to give up all my favorite foods. So this morning when my mom came to me with her plan to cook healthy cuisine, and asked me to try out all of her recipes and take pictures of the food, I was on board! Confession...I love food!

Okay, so for those who know me its not really a secret, I love food. I love the smell, taste, colors, textures and varieties of food. I love to cook; I love to bake. I love to dine in; I love to dine out. I love chatting with a friend over a delectable latte while noshing on a handmade muffin or cupcake. That's a whole other subject, I have a mild obsession with cupcakes, I'm just sayin. I get excited when I have company coming and I can make them an old favorite, or branch out and try something new.I have a love for whole foods and non packaged goodness. I do not eat anything I can not pronounce and cringe when my kids ask for Kraft Mac-n-Cheese. Cooking and baking relaxes me; it is a relief to the stress of my very busy life where I wear many hats and juggle a busy schedule. I'm a Mom, a wife, a friend, a daughter, a teacher, a volunteer, and a make-up artist. I cook, bake, and create in the kitchen for fun, but dream of opening a coffee house cafe that serves the best food and coffee in town.

So now that I have told you all the things I love about food and cooking, here's the one thing I hate. I hate the fact that due to all my experimenting in the kitchen I have an expanding waistline. I am in need of slimming down and find it hard to resist my love for lattes, ooey gooey cheese, warm crusty breads, buttery sauces, and melty dark chocolate and caramel sauces. My love for the rich and savory has effected my physique, and I am ready to change that. Here is the deal though. I refuse to go on some crash diet where I deprive myself of everything but tree bark to loose the weight just to gain it back, to hate myself, and start the cycle all over. Sooooo I have a plan to make amazing food and eat it, all the while still shedding the pounds I have to loose and keeping them off. On my journey I hope to find and create some amazing new dishes as well as have some fun with my oldest daughter who is an aspiring photographer and witty writer. She will be taking photos of my food as well as blogging her likes and dislikes about the eats I will be dishin up. Bon appetite!
